Aniseed Myrtle (Backhousia Anisata) is a stunning rainforest tree and is quite rare in the wild, native to a few areas of North East New South Wales. The tree can grow to 45mtrs but most often reaches 8-10mtrs.

The tree has fine green foliage and these leaves are dried and ground to produce a distinctive aniseed herb with a delightful aromatic finish.

Aniseed Myrtle can be used wherever a recipe calls for star anise. Sprinkle over cooked vegetables, or rub into all meats and seafood. Use when making savoury biscuits and breads. Aniseed Myrtle is intensely flavoured and should be used sparingly.
